I bought these quite a while ago and can't remember what I bought. I know they'll work but was hoping someone could tell me if theses are the dreaded Eldorado calipers.

No - Dave Clemens might. Several of the rear-disc kits sold by Underground and others included a cable. They might have something available.

Posted this on the V8 Registry forum, but since the topic came up here, I'll ask here as well. Has anyone explored the option of using an Electronic Parking Brake similar to what the late model Audi/VWs use? My wife's 2017 Ford Edge also has this feature, and every time I pull the jack out and go for the air tools, she makes sure I'mm not going for her Edge.

The electronic parking brake sounds cute, but the important question is -
how is actually grabbing the disk?

some exotic caliper assembly?
a little drum brake assy inside the rotor?
actually applying pressure to the caliper hydraulic circuit?

it makes a difference...

I don't have a parking brake on mine, as it has a fwd drive package in the rear.
Someday I'll mount some of those standalone lever-actuated calipers.
Maybe when I get the proverbial round tuit.

I don't get a lot of opportunities to drive her car, but on one occasion I did leave the parking brake engaged while trying to accelerate. The car didn't budge, but I didn't floor it either. Seat of the pants says it will hold up.

Operation appears to be a servo rotating the piston against the rotor. Been crazy busy to do more than some on-line research.

So tell me about the master cylinder. I too did a 4 wheel disc brake conversion. I was told that I need a master cylinder for manual brakes with 1.125 bore. But which one? There are hundreds of options.
