Fan Relay Switch for Oil Cooler

I'm installing a external oil cooler and Clarks oil stat and I want to install a Fan Relay switch that turns on at a certain temp. Would this one work:

It's for a coolant/radiator system but I'm thinking it would work. Also how about the temp range? What would be the optimal temps I should be looking for?

According to Clarks (just received an email) the OilStat opens up at 180 degrees so maybe 175 would be a good mark to aim for the fan to turn on. Either 175 before the Oilstat or perhaps 185 just after?

You want the oil above water's boiling point [ 212F ].... so set the fan to 220F.

This is the one I like. It's adjustable and includes a manual override capability. This version has a threaded sensor. They also make one with a radiator probe sensor.

I wanted something small for a temp switch so I got these Temp Switches to make my own relay system. The above link is for a 3/8" pipe I was able to find them in 1/8" pipe and 200 degrees. I will use the switch as a ground contact for the relay I use.
