I think the procedure of turning the fire extinguisher upside down and whacking with a mallet is no longer relevant:

Check with Clark's - I'm thinking they can make or modify their engine wiring harness for your alternator conversion.
They also offer discounts for multiple wiring harness orders.
I would definitely replace both the engine and body harness.
It would make good sense to replace the engine and body fuel lines as well. Apparently a small failure caused the fuel line to become an open spray which caused the fire, so I would certainly replace these with new metal parts.

Changing the body harness is a lot easier than replacing the instrument panel one. ( statement based on experience )
I have recently found that Home Depot sells small f/e's for $20.00. The next larger one is $ 16.00. They made great raffle prizes at our club meetings.
