Bought a Corvair and recently rebuilt carburettors, changed the oil, oil filter, oil pan and gasket, but now the car is leaking oil every time it runs.
It is only leaking form one of the two small holes under (what I believe is) the motor mount. The oil keeps leaking from one of those holes. The car leaked pretty inconsistently (sometime not even at all) before I did any work on it, but now it’s leaking a lot more. I suspect it might be the oil cooler seals, or the crank seals, since the oil is coming from somewhere in that area. Any advice or further questions would be greatly appreciated.

I would try the oil cooler seals first. It sounds like you're getting oil in the skid plate which could be from several places and you're on the right track for possible sources.
As an aside for 60s, Corvairs in general can get a leaky oil pressure sender and the 60 is located on the right side of the crankcase in the lifter gallery rather than on top in the generator mount like most Corvairs. That would probably end up in the lower shroud rather than the skid plate but maybe the oil would travel rearward...

Easy check would be the oil filter.
Sometimes the seal surfaces under the mount can trap debris that allows a pressure leak when a new filter is installed.

Oh, and one last thing. The oil is leaking into the skid plate from the left side, you can barely see it when you look down through the engine compartment but the source of the oil is definitely not on the right side of the engine it’s from somewhere Center left of the engine. The exact where the oil exact hole where it’s leaking from is also one of the two little drainage holes located at the end of the skid plate, it’s the left one (drivers side) where any oil actually drips out of. Also I forgot to mention but it only leaks when it’s not running. When it runs it’s completely dry.

Now that is a strange one!!

How long are you running it? Any leak that puts oil into that area would have to begin from a leak above or in front of that area when the engine is running.

Let the engine run and get to normal operating temp for 20 min or better at idle.

Does your car have an oil pressure switch beside the generator pulley/fan?
I'm wondering if someone has changed the oil filter mount plate assembly.

It doesn’t have an oil pressure switch. I will say that the oil filter mount plate assembly is from a later model, since the previous owner decided to install a LM alternator to replace the generator. I was running it in idle for a good half an hour.

Generally speaking I like to think the oil pan is the thing that leaks when it's not running but I wouldn't expect that to travel into the skid plate, maybe drip down adjacent.
I like to have a clean garage floor, take it out for a drive, put it on jackstands and see what develops on the floor. Sometimes I use a plumb bob to see where the origin is. If the puddle gets big, I clean everything up, start the engine and try to determine the starting point of the drip.
Everything drips off the bottom eventually, even a leak at the top cover.
Wind under the car on the road can confuse your efforts.
If indeed the oil is in the skid plate on the left side the oil cooler seals are my first suspicion.
Perhaps something is leaking with the engine running but it only collects and drips off the bottom after it's shut off?
A lot of times there's more than one leak and we work from largest to smallest as a process rather than an event.
