Does anyone know what the temperature of the cabin air, either heat or defrost should be?

Welcome to the CCF!

The engine with Thermostats working should produce air over 225F at the engine outlets...

Buy the time it gets to the front of the car... well over 100F.

Note: it's not just the Temp!! The Volume of air is very important..

Took mine over for a new top 2 days ago, about 30 and cloudy, maybe 6 or seven miles. Had to shut the blower off about half there, getting cooked.

With choke coils instead of bellows I got about 110 degrees out of the defroster. Replaced pass side with bellows today. Defroster went up to a good 130 with fan on Hi running 2500 rpm in garage. Hopefully I'll get to the driver side tomorrow and will update
